Great Interest in “Health Bread”

The interest in health bread, the bread produced with pâté, is increasingly rising not only in Italy, but all over the world, especially in the United States where there is great interest in healthy aspects related to polyphenols and minor components in the extra virgin olive oils.
Our customers Malcolm and Karen Bond from Bondolio Olive Oil in California, have chosen and bought Pieralisi DMF technology in order to recover pâté in nutraceuticals uses, primarily its use as food additive for bread and other bakery products.
The pâté contains a high content of polyphenols and has the capacity of adding flavor to foods as it is compatible with the leavening and baking processes that do not affect the antioxidant capacity. The bread obtained by addition of pâté produced with Pieralisi DMF decanter is an excellent food both from the sensorial point of view and the health aspect.
Malcolm and Karen came to Italy last month to see and follow step by step all the processing phases of health bread in order to be able to do it in California.
