A dough separating machine is a fully automatic machine for separating dough and hardening pieces of dough. It usually processes wheat dough of the usual quality with fat content max. 8%. A dough separating machine is part of the bakery line. A dough separating machine is used in bakeries. The dough separating machine is manufactured in a basic series according to the number of output lines (conveyors), either 3, 4, 5 or 6. Depending on the type of drive with a conical transmission or chain countershaft gear. Depending on the length of output conveyor 900 or 1800 mm. Depending on the drive of the output conveyor as discontinuous and continuous. Depending on the other supplementary devices with external dusting, flour spreader and piston lubrication for continuous operation.

Feeding dough into hopper

Dough is fed into a hopper either through a chute or manually by feeding individual pieces. Above the separating roller the hopper consists of sideboards, the intake side, front cross piece and piston guide. The dough then enters the area of the separating roller, loading piston and slide valve. The separating roller consists of three rows of pistons whose stroke can be continuously adjusted, thus altering the weight of the dough being separated (pieces of dough). The range of piston strokes is limited by cams. The piston displacement is done by the cams. The pistons are pushed in by the pressure of the dough.

Dough separation

a) The beginning of the power stroke – in the basic setting of the machine and in the control position the distance between the slide valve and separating roller (A) must be set at 12 mm for thick dough and 10 mm for thin dough, otherwise the cross pieces in the separating roller may get broken.

The separating roller starts rolling, the piston and slide valve are in their front end position, the taking-off roller and hardening casing are continuously rolling, the hardening belt is moving. The dough is in the area above the slide valve.

b) The control position – the mutual position of the piston and slide valve is controlled (the piston is extruded max. by 15 mm against the slide valve). The separating roller keeps rolling, the piston and slide valve are returning to their basic end position, the taking-off roller and hardening casing are continuously rolling, the hardening belt is moving. The area between the roller and piston gets filled with dough. While the separating roller is rolling, the cams displace one row of pistons, thus pushing out pieces of dough from the rollers. The pieces of dough hit the taking-off roller, which takes them off to the chambers in the hardening casing.

c) Completion of pushing out and taking off the pieces of dough – the second control position of the hardening casing and taking-off roller. The separating roller stops, the piston and slide valve reach their rear end position, the taking-off roller and hardening casing are continuously rolling, the hardening belt is moving. The area between the roller and piston is filled with dough. While the separating roller is rolling, the cams displace a row of pistons, thus pushing out pieces of dough from the rollers. The pieces of dough hit the taking-off roller, which takes them off to the chambers in the hardening casing.

d) Filling the rollers – the separating roller is not moving, the piston and slide valve are moving forward. The taking-off roller and hardening casing are continuously rolling, the hardening belt is moving. The slide valve goes ahead of the piston and cuts off part of the dough while closing the area above the piston and creating a chamber limited by guiding of the piston, slide valve, separating roller, separating pistons and flat-top piston. The flat-top piston moves forward and pushes the dough. The dough presses the pistons of the separating roller, until their movement is stopped by the cams. The dough surplus goes through the space between the separating roller and slide valve to the area above the slide valve.

Dough hardening

The pieces of dough that fell from the separating roller and into the chambers in the hardening casing move together with the hardening casing. Inside the hardening casing there is a hardening drum that rolls at the same speed as the hardening casing, while moving in the direction of the axis (spiral movement). When the hardening casing rotates, the pieces of dough go between the hardening drum and hardening casing which marks the actual dough hardening. After hardening the pieces of dough still remain on the hardening casing, which takes them to the conveyer belts. The hardening belt is made taut by a weight that can be moved along a bar.

With older versions of the machine if available the hardening intensity can be controlled by altering the revolutions of the hardening drum and tautness of the hardening belt. The revolutions of the hardening drum can be controlled continuously by shifting the electromotor. Shifting the electromotor can be done by turning the manual wheel. The speed of hardening is shown by the indicator on the scale

Transport of the separated dough (pieces of dough)

The separated dough continues for further processing using the output conveyor.

The transport belts move either discontinuously and then the motion can be changed by moving the pulley to on of three positions in the handle, or continuously.

The speed of the transport belts depends on the drive of the separating roller.
