The evaporator has a key role. The climate in your storage cell is determined by this important device. And not only because it determines the room temperature. As we all can notice when looking at an air conditioner: water is dripping out coolers. This means the air inside your cold store is dried during cooling. Sometimes this is desirable: avoiding too much moisture in a cold store is also avoiding mould and bacteria growth. But certainly you don’t want to dry indoor air too much as it turns into drying out your product as well, loosing product quality and product weight thus reducing sales value.

The third role of the evaporator is to distribute the coolness through air circulation. In general you will want to have an evenly distributed temperature across your cold store or freezer store. Products in one side of the store need to have the same temperature as products on the other side. And air needs to circulate through a box with egg plant or through a bunch of flowers.
Minding all of these points we also need to consider the air speed. People don’t want draft, so not too high air speed when people are around. But cooling power is greatly enhanced when air speed is going up (consider the air speed in freezer tunnels!). More air speed is also more dehydration and more noise.
