Kinzyme is a specialized form of Xylanase, which effectively reduces mucin secretion. Mucin acts as a nutrient source for certain pathogenic bacteria like E. coli and Clostridium perfringens. Due to its rich content in amino acids such as threonine, proline, and serine, excessive mucin secretion can lead to high endogenous nitrogen losses. The xylanase enzyme in Kinzyme is designed to break down the xylan fibers found in various plant-based food items such as wheat bread, cereal grains, nuts, and fresh vegetables. This enzyme features high stability and specific activity, deriving from two distinct bacterial strains. It works efficiently through both endo-xylanase and exo-xylanase activities, ensuring high hydrolysis of soluble and insoluble xylan. Additionally, Kinzyme maintains over 80% enzyme activity even at high temperatures up to 80°C.
