Tartaric stabilization is related to precipitation phenomena caused by potassium and tartaric acid present in wine. These two substances are naturally present in the grapes but without chemically coming into contact; when the grapes are pressed, on the other hand, the two substances mix and can create problems of precipitation of potassium bitartrate. This precipitation is a slow process that can occur in the winery after fermentation of the must or directly in the bottle, after the wine has been bottled, once the wine reaches the wine shop shelves. This phenomenon does not cause any organoleptic damage in wine but certainly, visually, the product is not considered of a good quality and is not accepted by an increasingly demanding consumer and market.

The working principle of Easy Check is to promote the precipitation of potassium tartrate by adding excess THK. Stability measurement is then derived from determining the electrical conductivity of wine under different temperature conditions.
