Food ingredients are substances that are added to food to achieve a desired effect. Food ingredients usually include food additives, i.e. substances added to food during processing, storage or packaging for specific technical and/or functional purposes. There are two types of food additives - direct additives and indirect additives. Direct food additives are used in foods to impart specific technical or functional qualities. For example, stabilizers are used to help prevent the separation of nutrients in fortified dairy products, while phosphates are used as a bulking agent in baked goods. Indirect additives are not intentionally added to foods, but may be present in trace amounts during processing, packaging, transportation, or storage.
